Cranberry Relish
2 apples, peeled and cubed
2 pears, peeled and cubed
2-12 ounce bags cranberries (6 cups)
pinch sea salt
1 teaspoon ground cardamom
1 cup orange juice, fresh
1/2 cup currants
1/2 cup maple syrup
2 teaspoons orange zest
Combine ingredients together in a saucepan. Cook until all have melted together, about 20 minutes. Serve room chilled or room temperature.
