Personal Notes: Happy Holidays to all – enjoy the season for
what it is – a time to connect with people and/or a religious
celebration. One of my favorite ways to do this is to send holiday
cards. This is a way to stay connected
to people that you don’t have the time to see or communicate with
during the year. The key is really to
stay sane during the season – my holiday tele- series will go along way
to accomplishing that.
This
month’s featured recipe below is one of my favorites. I was never a big chocolate fan as I was
allergic to it as a child and I did not grow up eating it. For years as an adult, I always wondered what
the big deal was about chocolate. That
was until nutrition school when we discussed DARK chocolate. Now I TOTALLY get it – and love it!

Tip
Chocolate – People love it but often
feel guilty when they indulge.
It’s true, it does have many redeeming qualities:
- obviously, it tastes good and
gives us pleasure to eat it. Both
good traits
- some experts claim it releases
brain functions similar to being in love
- it gives us energy - from the sugar and caffeine
- historically it has been
considered an aphrodisiac
- it contains phenols that counter
artery-clogging plaque and lowers blood pressure
- additionally, it contains
antioxidants., which as you probably know has been shown to help fight cancer
Hint, when
purchasing chocolate – the higher the QUALITY the better, also the
lower the sugar content the better. Dark chocolate is a better choice as it
is less diluted with sugar and milk; as such you are getting to REAL
chocolate with less. So, enjoy it
guilt free - in moderation of course!

Featured Recipe
Chocolate
Tofu Mousse Serves 4 - 6
This could
be a nice addition to the holiday table – even folks that swear they
hate tofu love this one! And, it could
not be easier.
1 lb silken tofu
10 oz chocolate chips, preferably dark chocolate, grain
sweetened
Melt chocolate
gently in double boiler. Blend tofu in
blender or food processor until smooth.
Add melted chocolate and swirl together. Refrigerate until cool and set.
Options: You can add vanilla, cinnamon or even
peanut butter! If you like a sweeter
dessert, you can add a little maple syrup, agave nectar or stevia. I personally like it a little bitter.
Note: silken tofu is a special
form of tofu – it is lighter and smoother. It lends itself to puddings and smoothies
nicely.

Unfrazzling Gift Ideas

We don’t HAVE to be crazy running, running during
the holidays. We CAN maintain balance
throughout the season. We CAN savor
some time for ourselves. We
DON’T have to be in debt at the end of the year as a result of holiday
gift buying. Below are a few tips to accomplish these goals.
Give some thought to whether or not you even REALLY need
to buy a gift for a certain someone. I
am certainly not suggesting you become Scourge but perhaps another
“whatever” is not what the person needs or even wants. Last year, a dear friend emailed me and two
other good friends and suggested instead of buying each other gifts we find a
mutual time to get together in January and have a really nice dinner and
catch up. This had so much more value
than bath salts or some such thing.
You can do the same thing. The
point being, look for something personally meaningful – it does not
have to be a purchased gift.
Give of yourself- how about giving yourself for baby
sitting, closet organizing, cooking a meal for someone, or doing maintenance
if you are a Mr. or Ms Fixit type? Or,
create a hand-made gift.
Give an experiential gift – how about a cooking
class, a yoga class, a language class, a wine tasting class or an underwater
basket weaving class? It’s a
gift that keeps on giving long after the holiday.
A gift that helps others along the way – here are

health -- Holiday shopping with ease –

How
do these suggestions help us to stay in balance? All of them can be found on the web –
let your computer do the searching instead of running around like a mad

others along the way. Karma WILL kick
in. If you do something nice for
someone - the world will return the favor (not that that is why we do nice things
for others). If we can maintain some
semblance of order during the holidays – perhaps food choices can be
more balanced as well. See, there WAS
a method to my round about way J
