sneak in extra veggies. It fills you up
in a nutritionally and low calorie way.

Recipe
Roasted Butternut Squash and
Tomato Soup
The
inspiration for this came from a class I recently attended at Whole Foods.
1 large
butternut squash
6 medium
tomatoes (or 1 lb can whole tomatoes)
4 1 / 4
cup vegetable stock (omit if using canned tomatoes)
4 cloves
garlic
2 T
balsamic vinegar
2 sprig
fresh rosemary
2 sun
dried tomatoes
4 1 / 4
cup vegetable stock
1 leek,
sliced
2 carrot
peeled and diced
2 celery
ribs, diced
2 T fresh
thyme leaves
I can
chickpeas, drained and rinsed pureed with a little veg.

Juice of
2 oranges
Salt and
pepper
Rinse the
butternut squash and slice in half.
Soup out seeds, brush cut side with olive oil and place cut side down
on a baking dish. Roast for 35 minutes
at 375 or until tender. Meanwhile,
halve the tomatoes and place in backing dish with garlic, 1 cup vegetable
stock, vinegar, rosemary and sun dried tomatoes. Roast for 30 minutes.
Heat 2 T
vegetable stock in Dutch oven or soup pot.
Add leeks and cook until translucent; then add carrots, celery and cook,
stirring occasionally, until all veggies are soft. You may need to add a bit of veggie stock.
Scoop out
squash flesh and add it to the soup pan with the remaining 3 cups of
vegetable stock and pureed chick peas.
Simmer, uncovered, for 20 minutes. Add remaining ingredients (including
roasted tomatoes (remove rosemary sprig first). Using an immersion blender, food processor
or high speed blender puree the soup.
Adjust seasonings.

additional monthly forms of education and participation -- activities like
cooking coaching, health food store shopping hints, light exercising
functions and other activities. My practice is telephone based, allowing
for maximum flexibility and ease.
