Salad Serves
4
- this is a great one to make after a visit to the a farmer market
Ingredients
- Zest and juice of 1 lemon
- 1 / 4 cup extra-virgin olive
oil
- Coarse salt and ground pepper
- 6 ounces red new potatoes,
well-scrubbed and cut into 1 / 2-inch chunks
- 2 garlic cloves, thinly
sliced
- 1 small zucchini (about 6
ounces), thinly sliced lengthwise, then cut lengthwise into very thin
strips, and then halved crosswise
- 1 small head of fennel (about
8 ounces), tops removed, thinly sliced crosswise
- 2 ounces radishes (about 4),
ends trimmed, thinly sliced
- 2 scallions, thinly sliced
- 1 / 2 cup flat leaf parsley
leaves
- 2 tablespoons capers, rinsed
and dried
Directions
- For the vinaigrette, combine
the lemon zest and juice in a large bowl. Slowly add oil in a steady
stream until incorporated; season generously with salt and pepper.
- Place potatoes and garlic in
a small pot of cold salted water. Bring to a boil over high heat, reduce
to low, and simmer until potatoes are cooked through, but not falling
apart, about 7 minutes. Drain well and add to the bowl with the
vinaigrette. Toss well; cool to room temperature.
- Add zucchini, fennel,
radishes, scallions, parsley, and capers to bowl; toss well and serve
immediately.

Farmer’s Market Near You by Brenda Jaeck
We’re approaching that time of year when it is a GREAT
idea to frequent your local farmer’s market. Why?
Just some of the reasons are summarized below:
Fresh produce – what better place to find a plethora
of fresh veggies – perhaps you’ll even find one you have not tried
or cooked previously.
Know where your food comes from – straight from
the source – what could be better than that? Also to eat food that has not traveled
across the globe is a good goal – it’s fresher and it uses a lot
resources.
An adventure – it’s an event to go to a farmer
market. You never know who
you’ll meet or what you’ll get to experience.
Outside fresh air – what a better way to connect with
nature and the food you eat than at an outside venue. You’ll breathe fresh air and take in
a few rays instead of breathing recycled air and experiencng fluorescent
lighting.
Support local farmers – independent farmers are becoming few
and far between – what better way to show your support than to come out
and chat with them and buy their wares.
Promote community where you live – you’ll
interact with people of all types that live in your community. Perhaps you’ll even meet your
neighbors that you don’t know.
Getting out to a farmer market is a great experience in and of
itself – AND you leave with a bunch of yummy (and healthy) produce.

functions and other activities. My practice is telephone based, allowing
for maximum flexibility and ease.
